Chocolate Carrot Cake
with White Chocolate Cream Cheese Frosting
(Serves 12 hungry rabbits)

8 eggs
3 3/4 cups granulated sugar
1 1/2 cups vegetable oil
1 teaspoon salt
2 cups All Purpose Flour
1 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
4 cups grated carrots
InstructionsWhip eggs and sugar on high speed until pale yellow and tripled in volume.  Gradually add oil with mixer funning.  Sift together dry ingredients, add to egg mixture.  fold in carrots.  Pour into 2 (10-inch) cake pans.  Bake at 350 degrees for 1 hour.
Frosting Ingredients
1 lb. white chocolate, melted and cooled
1 lb. powdered sugar
1 cup butter
2 cups cream cheese
2 teaspoons vanilla extract
Cream butter and sugar.  Add cream cheese a little at a time.  Mix in vanilla and white chocolate.Frost between the cake layers… put them together… frost the whole outside of the cake… then FEED THE RABBITS!

Delicious Carrot Cake
For Bunnies

(Serves 6-8 hungry rabbits)

3 cups grated carrots
2 cups sugar
2 cups flour
1 1/2 cups vegetable oil
8-oz. can crushed pineapple
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1 cup chopped nuts or 1 cup coconut flakes
(or 1/2 cup each)
Beat together the carrots, sugar, flour, eggs, oil, and pineapple.  Add soda, salt, cinnamon, vanilla, and nuts (or coconut).  Mix well.  Pour into greased and floured 13 x 9 pan.  Bake at 350 degrees for 55 minutes, or until it tests done with a toothpick.  Cool and frost with Cream Cheese Frosting… then feed bunny rabbits!
Cream Cheese Frosting
1 box (1 lb.) powdered sugar
1/2 cup melted butter
8 oz. cream cheese, softened
1 tsp. vanilla
2 T. mild or cream as needed to thin

Beat all ingredients together until well blended.
